When selecting a honey, acacia honey is preferred. It is
light-colored, almost transparent, and very thin, which makes it easy
to work with when measuring and pouring. The flavor is sweet and
delicate, so acacia honey rarely becomes too dominating in terms of
taste. Most light-colored honeys, such as alfalfa, clover or sage honey, can be used as a substitute for acacia honey, as there usually is a correlation
between color and flavor. If one is light, then so is the other.
