Diet high in soy protein may help prevent cardiovascular disorders
Research at Southern Illinois University involving rats and soy proteins may help prevent liver and cardiovascular disorders in humans. Tests performed by researchers indicate that a diet high in soy proteins can vastly decrease the size of a rat's liver. Because the human cardiovascular system is so similar, soy proteins could prove effective in preventing human liver disorders.


Tofu Enlisted in The Fight Against Cancer
Over 600 scientists were drawn to a conference on soy in Washington, D.C. on Oct. 31 to hear the intriguing new findings on the cancer-fighting properties of isoflavones, a plant-based form of the hormone estrogen that is unique to the soybean. Isoflavones appear to help strengthen bones, reduce the unpleasant symptoms of menopause and, most importantly, control how quickly cells replicate, which could be beneficial in preventing the out-of-control cell growth associated with cancer. The National Cancer Institute recently listed genistein, the main isoflavone in soy, as one of four "superior" anti-cancer agents.


Study of Beneficial Grape Compounds Intensifies in 1999
Published research on resveratrol -- a phytonutrient found in fresh grapes -- has nearly tripled in the past two years, indicating strong interest in the health benefits of this compound. Resveratrol, found mainly in the skins of grapes, is noted for its antioxidant and anti-inflammatory properties and its potential to prevent cancer and heart disease. In addition to resveratrol, fresh grapes contain a variety of other phytonutrients, including quercetin, catechins, anthocyanins and proanthocyanidins. All of these compounds are antioxidants, and are believed to protect living cells against damage by free radicals. The ravage of healthy cells by free radicals is considered a key factor in the body's overall aging process, including development of certain chronic diseases such as cancer and heart disease.
